Sunday's four readings are in the same handwriting as Monday's, and the closer who supposedly took them was off that weekend. The walk-in actually did drift to 47 that night. The sheet says 38, 38, 39, 38.

The person in charge gives daily oversight of employees' routine monitoring of cooking temperatures, food temperatures during cooling, hot and cold holding temperatures, and food temperatures during thawing.
✕ Not required
A temperature log. The rule requires the monitoring and the daily oversight of it — it does not say the readings have to be written down. Written records enter the picture where you run a HACCP plan: reduced oxygen packaging, cook-chill, sous vide. Not for the walk-in you check twice a shift.
